Colheita (método): Manual harvest. Selected grapes in the vineyards (no rot in the press).

Vinificação: Foot treading of whole grapes in a macerating vat. The maceration takes place between 8 and 15 days in an open tank with a small daily manual pressing. Only indigenous yeasts are used for fermentation and the juices are moved by gravity.

Envelhecimento: Without intervention, the wines spend 12 months with their lees in barrels older than 3 years.
